Recipe: Lions Mane Vegan Pasta

Lion's Mane mushrooms are a unique and delicious mushroom variety with a seafood-like taste and a meaty texture, making them an excellent addition to a vegan pasta dish. Here's a Lion's Mane vegan pasta recipe that you can try:


  • 8 oz (about 225g) Lion's Mane mushrooms, cleaned and sliced into thin strips
  • 8 oz (about 225g) pasta (such as linguine, fettuccine, or your favorite)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 1/2 cup unsweetened almond milk or another plant-based milk
  • 2 tablespoons nutritional yeast
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Fresh parsley or basil for garnish (optional)


  1. Cook the Pasta:

    • Cook the pasta according to the package instructions until it's al dente. Drain and set it aside.
  2. Sauté the Lion's Mane Mushrooms:

    • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
    • Add the Lion's Mane mushroom strips and sauté for about 5-7 minutes, or until they are golden brown and slightly crispy.
    • Remove the mushrooms from the skillet and set them aside.
  3. Prepare the Sauce:

    • In the same skillet, add the remaining 1 tablespoon of olive oil and heat over medium heat.
    • Add the chopped onion and garlic, and sauté for about 3-4 minutes until they become translucent and fragrant.
  4. Combine the Ingredients:

    • Return the sautéed Lion's Mane mushrooms to the skillet with the onion and garlic.
    • Pour in the vegetable broth, almond milk, nutritional yeast, lemon zest, and lemon juice. Stir to combine.
    • Let the sauce simmer for a few minutes, allowing it to thicken. If the sauce is too thick, you can add a little more almond milk or vegetable broth to reach your desired consistency.
    • Season the sauce with salt and pepper to taste.
  5. Toss with Pasta:

    • Add the cooked pasta to the skillet and toss it with the Lion's Mane mushroom sauce, ensuring the pasta is well coated with the sauce.
  6. Serve:

    • Divide the Lion's Mane vegan pasta among serving plates.
    • Garnish with fresh parsley or basil if desired.
    • Serve hot and enjoy your Lion's Mane vegan pasta!
