Ingredients:
- 8 oz (about 225g) Lion's Mane mushrooms, cleaned and sliced into thin strips
- 8 oz (about 225g) pasta (such as linguine, fettuccine, or your favorite)
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup vegetable broth
- 1/2 cup unsweetened almond milk or another plant-based milk
- 2 tablespoons nutritional yeast
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- Fresh parsley or basil for garnish (optional)

- Cook the pasta according to the package instructions until it's al dente. Drain and set it aside.
